Description
Clairin Sonson, produced in Cabaret in the bay of Port-au-Prince, is distilled in the purest tradition: the freshly pressed cane juice is taken to the cooking room where it is concentrated by successive heatings until it turns into syrup.
The fermentation, made using wild yeasts, lasts a week, after which the must will be distilled in small copper stills (3 trays). Like the rest of the clairins marketed by Velier, it is offered at natural strength (still proof).
