Description
Clairin Le Rocher is produced by Bethel Romulus from cane syrup: once the canes are pressed (3 different varieties are grown: Madame Meuze, Canne Blanche and Pete Coca), the juice is brought to the boil to be transformed into syrup that will ferment for several days. Bethel adds dunder (method used for high ester rums) to boost the fermentation, which is done without adding yeast.
Distillation is carried out in a Pot Still and bottling, like the entire range of Clairns selected by Velier, is done at natural strength, still strength.
