Description
Clairin Sajous is produced at the Chelo distillery, located in the north of Haiti, in the commune of Saint-Michel de l'Attalaye.
It is distilled from pure Cristalline sugar cane juice, an old and rare variety grown entirely naturally (without any treatment). Once pressed, the cane juice is fermented without adding yeast (wild yeasts present on the canes are sufficient) for several days, before being distilled in a still heated over an open fire.
Like the rest of the range, clairin is bottled at its natural strength, brut de distillation.
