Description

Here is a single-varietal Ecuadorian rum, El Amparo, resulting from a unique know-how inherited from three generations and which we owe to Gonzalo Almanzor Zorrilla Toala.

Grown in Jipijapa, this rum exclusively uses a variety of local sugar cane, "Cubana Negra", still harvested with a machete. The fermentation is entirely natural (indigenous yeasts) and takes place in vats with a volume ranging from 1000 to 3000 liters. It lasts 5 to 7 days depending on the sugar concentration of the canes.

This Pure Single Ecuadorian Rum is then distilled in a copper still with a capacity of 500 liters. After a single pass, the distillate comes out of the still at approximately 60%.
