Neisson Clos Godinot
Description
Here is the first single-plot rum produced by the Neisson distillery! Clos Godinot is in fact the name of a plot located in Carbet and which peaks at an altitude of 245 meters. Very steep, it benefits from significant sunshine and temperature variations that allow the harvest of particularly sweet canes (with a brix of 27, where the average is around 18).
For this rum distilled on the legendary Savalle column in Neisson, the fermentation was particularly long: 4 to 5 days, which is the maximum limit authorized by the AOC Martinique.
