St. Nicholas Abbey
A former plantation whose history dates back to 1658, Saint Nicholas Abbey has always been linked to sugar production. The plantation who resold its molasses to other distilleries on the island will start producing rum in...2006. Under the impetus of the Warren family, the new owner, St Nicholas then officially became the fourth distillery on the island.
The locally grown sugar cane is ground in a steam mill dating back to 1890. The cane juice is then cooked for storage before being distilled in a traditional column nicknamed "Annabelle".
