The story of the Poisson distillery, stronghold of Père Labat rum, began in 1860 when the eponymous family bought the Grand-Bourg estate to establish a sugar refinery there. It took half a century for the production of rum to begin under the impetus of the Rameau family, who bought a still and a steam engine for the occasion.
Although the distillery has modernized, it remains faithful to its traditional techniques: the sugar cane is still cut by hand and transported to the distillery on ox-drawn carts and crushed within 48 hours of harvest, before to be distilled in a traditional pot still.
