La Rhumerie de Chamarel is one of the most recent distillery in Mauritius. It was in 1996 that the Couacaud family bought the Domaine de l'Exil in Chamarel, whose main activity is sugar cane, cultivated on 220 Hectares. After a few years of reflection, the Family decided in 2008 to build the distillery from scratch with the aim of producing only rum from pure cane juice, exclusively from the estate's plantations.
The property extends over 300 hectares, 35 of which are planted with cane, for an entirely handmade harvest of around 2,000 tonnes per year. Chamarel produces two different distillates, the first resulting from a continuous distillation made in a column with Barbet trays entirely in copper, and the second resulting from a double discontinuous distillation thanks to a first cognac still and a second Armagnac type still, both all copper clad and steam powered.
